  • 1 cup buckwheat flour
  • 2 tbsp arbi or boiled potatoes (for binding)
  • 1/2 cup curd (optional)
  • 1 tsp cumin
  • rock salt as per taste
  • Green chillies, finely chopped (as per taste)
  • Green coriander (for garnish)
  • Ghee or oil (for baking dosa)
  • Water (as required)

1. First of all, take buckwheat flour in a big vessel. Add boiled and mashed potatoes to it. This will help in binding the dosa batter and making it crisp. If you want, you can also add 2 tablespoons curd in it, which will add sourness to the dosa and enhance its taste.

2.Now add cumin seeds, finely chopped green chillies, green coriander and rock salt.

3. Now prepare a smooth and thin solution by adding water little by little. The batter mixture should be thin enough that it can be easily spread on the pan, but not so thin that it does not stick to the pan.

4. Heat a non-stick pan. Pour a little ghee or oil on the pan and spread the prepared batter in a round shape. Bake it on medium flame until it becomes crisp and golden.

5. Serve the prepared dosa hot with green chutney or curd.

Dosa made from buckwheat flour is a tasty and healthy option that provides energy during fasting. Apart from being gluten-free, this dish is easy to digest and full of nutrients.
