- 2 boiled potatoes (mashed)

- 1 green chilli (finely chopped)
- A little coriander (chopped)
- 1 teaspoon ghee or oil
- water (for kneading)
- Ghee or peanut oil for frying

- First of all, take buckwheat flour in a vessel. Add boiled potatoes, finely chopped green chillies and green coriander into it. Then add rock salt and mix well. By adding potatoes, the dough gets kneaded easily and the puris become soft.
2. Now add water little by little and start kneading the dough. Keep in mind that the dough should not be too hard or too soft. Knead it soft and elastic so that the puris swell well and become crispy.
3. Make small balls from the kneaded dough and roll them completely with the help of a rolling pin. Be careful while rolling buckwheat flour puris, because this flour is not as flexible as normal flour. Keep the puri a little thick from the middle and thin from the edges so that the puri swells while frying.
4. Heat ghee or peanut oil in a pan. When the oil is well heated, add rolled puri into it. Fry the puri on medium flame so that it becomes golden and crispy from both the sides. Once the puri is cooked, remove it from the oil and keep it on tissue paper to remove excess oil.
