Ingredients for making Mango Launji
Raw mango pieces – 1 cup
Fennel seeds – 1/2 tsp
Cumin – 1/2 tsp
Rai – 1/2 tsp
Red chili powder – 1/2 tsp
Carom seeds – 1/4 tsp
Jaggery – 1 cup
Chaat masala – 1/2 tsp
Garam masala – 1/2 tsp
Black salt – 1/2 tsp
Asafoetida – 1 pinch
Oil – 2 tbsp
Water – 1 cup

To make Mango Launji, first wash the raw mango with clean water. After this wipe the mangoes with cotton cloth. Then peel the mango peel and cut it into long pieces and separate its kernels. Then put 2 spoons of oil in the pan and put it on medium flame. When the oil becomes hot, add other spices including mustard, fennel, asafoetida and cumin. After this fry them for some time.
When these spices are cooked, put the mango pieces in the pan. After this mix the spices well. Then after some time add red chili powder to it. Then while cooking on low flame, add 1 cup of water and salt and cover it while stirring well. Now let the mango launji cook for 2 to 3 minutes.
After cooking launji, add 1 cup crushed jaggery to it and mix. Now increase the gas and cook the launji till then. Until the jaggery melts well and mixes with the mango pieces. If you want to keep it slightly sour, then you can also increase the quantity of jaggery. After this add chaat masala and garam masala to the launji and mix. After cooking for some time, turn off the gas. In this easy way, mango launji will be ready. You can serve it with lunch or dinner. With this the taste of your food will be doubled.
