Material:
Medium size sago – 1 cup (150 grams soaked)
Potatoes – 5 (300 grams) boiled
Peanuts – ½ cup (100 grams) (roasted and coarsely ground)
Green Coriander – 2 to 3 tbsp (finely chopped)
Green chili – 2 (finely chopped)
Ginger paste – 1 tsp
Black pepper – 8 to 10 (coarsely crushed)
oil for frying
Method:
Wash 1.1 cup Sabudana and soak it in 1 cup clean water for 2 hours. Remove excess water if visible.
Peel the boiled potatoes and mash them finely. Mix sago, rock salt, finely chopped green chillies, ginger paste, coarsely ground black pepper, finely chopped green coriander and coarsely ground peanuts. Mix everything well. The mixture for making vada is ready.
3. Heat some oil in a wok or pan. Take out a little mixture from the mixture, roll it into a round shape and flatten it with the help of the palm. Place this vada over the plate, repeat the process till the entire mixture is used up.
4. Put one vada in the hot oil. If it is not disintegrating, add 3 to 4 more vadas and fry them till they turn golden brown. Take out the fried vadas on a plate covered with kitchen paper towels to remove excess oil. Similarly, fry the rest of the things as well.
5. Sabudana Vadas are ready. Serve these hot vadas with green coriander chutney, sweet chutney or tomato sauce and eat.
