Milk – 1/4 cup
Rice flour – 1 tbsp
Cumin powder – 1/4 tsp

Turmeric powder – 1/2 tsp
Red chili powder – 1/2 tsp
Asafoetida – 1/4 tsp
salt to taste
Ingredients for making chutney
Tomato – 1
Onion – 1
Ginger and garlic – 1 tsp
Green chili – 1
Sugar – 1 tsp
Soya sauce – 1 tsp
Mint leaves – 3-4
Lemon juice – 1 tbsp
How to make cucumber fritters
Wash the cucumbers thoroughly and peel them. Then grate it and squeeze it well and keep it in a separate plate.
Now mix rice flour, cumin powder and a pinch of salt in it. Then squeeze out the water from the cucumber once more and make balls out of it.
After this, mix gram flour, salt, asafoetida, milk, turmeric powder and red chilies well in a bowl.
Add water little by little to make a thick consistency batter.
Now wrap the cucumber balls well in gram flour and fry them in a pan with hot oil.

How to make kasoori methi mathri
First of all, put Rajgira and wheat flour in a vessel. Then mix all the spices, salt, kasuri methi and baking soda.
Now heat ghee in a pan and mix it in the flour. After this, mash all the spices and flour with your hands.
Explain that this mixture should look like breadcrumbs. Now add water to this flour and knead it.
Then cover it with a wet cloth and keep it like this for about 10 minutes.

Moong Dal – 1/2 cup

Cumin – 1 tsp
Fennel – 1 tsp
Asafoetida – a pinch
Turmeric – 1/4 tsp
Chilli – 1 tsp
Coriander powder – 1 tsp
Garam masala – 1 tsp
Mango powder – 1 tsp
Ginger powder – 1 tsp
Gram flour – 1/4 cup
Ghee – 3 tbsp
Maida – 2.5 cups
Flour
salt to taste
water – for kneading the dough
How to make dal kachori
To make Dal Kachori, first soak the Moong Dal for 2-3 hours. Then when the pulse swells, put it in the mixer and grind it. Keep in mind that it is not to be grinded too fine.
Now heat ghee in a pan, add cumin, fennel and asafoetida. After this add turmeric powder, coriander powder, garam masala, chili, dried mango powder, ginger and salt and mix.
Then add gram flour and fry it. When gram flour is roasted well, add moong dal and mix. Now cook it for 5 minutes.
After this, put the flour ingredients in a bowl and knead it. Keep the dough covered with a cloth for 10 minutes.
