Punjabi Kadhi
People also call Punjabi Kadhi as Kadhi Pakora. Punjabi Kadhi is prepared with curd, gram flour, water and mild spices like cumin and turmeric powder. To make this recipe more tasty, green chili and red chili powder are also used in it. While making Punjabi Kadhi, apart from pakoras, chopped onions are also added to it.
Gujarati Kadhi
Gujarati Kadhi has a distinct flavor and is sweet in taste. Gujarati Kadhi is made without dumplings and is made using jaggery, curd and gram flour, however, turmeric powder is not used. Also, onion and garlic are not used while making it, rather spices like asafoetida, cumin, mustard seeds, curry leaves, etc. are used to flavor it.
Fajito Kadhi
This curry is also made mainly in the state of Gujarat. This curry is tangy, sweet and slightly spicy. Actually, while making this Kadhi, raw mangoes are included in it, due to which this Kadhi becomes sour. Fajito Kadhi is also prepared without onion and garlic. This mango curry can also be eaten with rice and rotis.
Maharashtrian Kadhi
While making Maharashtrian Kadhi, no pakodas are included in it. This kadhi is slightly sweetened with sugar or jaggery, making it taste closer to Gujarati kadhi. Red chillies, cumin, curry leaves and asafoetida etc. are used while making it. Maharashtrian Kadhi, usually made without onion and garlic, is eaten with rice and khichdi.
Sindhi Kadhi
While making Sindhi Kadhi, a lot of vegetables are included in it, due to which this Kadhi made of gram flour and curd looks a lot like Sambhar. Typically, this Sindhi kadhi is flavored with vegetables like carrot, okra and drumstick, making it a very nutritious addition to your summer platter.
