Fasting is an essential part of Mahashivratri rituals as per Hindu scriptures, and devotees usually follow strict fasting rules on this day. It is believed that by fasting on this day, people get the blessings of Lord Shiva and purify their mind, body and soul. In such a situation, here are some special dishes for you which are not only delicious but also healthy and easy to make. So, this Mahashivratri, try these vrat recipes and enjoy a healthy and satisfying meal.

Sabudana Vada
Material:
- 1 cup sago
- 2 boiled potatoes, mashed
- 1/4 cup roasted peanuts, coarsely ground
- 1 teaspoon ginger paste
- 1 teaspoon green chilli paste
- 1/2 tsp cumin
- rock salt as per taste
- oil for frying
Method:
- Soak sago in water for 3-4 hours or overnight.
- Drain the water and mix the soaked sago with mashed potatoes, crushed peanuts, ginger paste, green chilli paste, cumin seeds and salt.
- Make small balls or patties of the mixture.
- Heat oil in a pan and fry the vadas until they turn golden brown.
- Serve hot with chutney.
buckwheat flour bread
Material:
- 1 cup buckwheat flour
- 1 boiled potato, mashed
- 1 green chilli
- rock salt as per taste
- Ghee
Method:
- Mix buckwheat flour, mashed potatoes, chopped green chillies and salt in a mixing bowl.
- Add water slowly to knead a soft dough.
- Make equal sized balls of dough.
- Roll each dough into a thin disc.
- Heat the pan and cook the rotis until they turn brown on both sides.
- Apply ghee on roti and serve hot with curd.
Sabudana Aloo Tikki
Material:
- 125 grams sago
- 150 grams potatoes: boiled, peeled and mashed
- 1-2 pieces green chilli
- 2 tbsp peanuts, coarsely ground
- ½ tbsp cumin powder
- 1 teaspoon rock salt
- 5-6 tbsp peanut oil
Method:
- Wash sago and soak it in water for 3 to 4 hours. Soak it until it becomes soft when pressed.
- Boil the potatoes in a pressure cooker, the potatoes should be well cooked. Once boiled, peel it and mash it well in a bowl.
- Add sago and chopped green chillies to mashed potatoes.
- Add cumin powder and rock salt as required and mix it well.
- Make flat patties from the mixture.
- Heat 2 tablespoons peanut oil in a frying pan. Put 4 to 5 Sabudana Tikkis in the pan and fry on medium flame.
- When the base becomes light brown, turn it and fry the other side of the pan.
- Fry until golden and crisp.
- Serve Sabudana Tikki with sweet curd or coconut chutney.
Rajgira and Rose Kheer
Material:
- 150 grams Amaranth seeds (Rajgira)
- 10-12 rose petals
- 100 grams dates (soaked in water and mashed)
- Cashews, Boiled Almonds
- 350 ml water for pressure cooking
- 350 ml milk
- 5-6 green cardamoms, crush and make powder
Method:
- Add Rajgira and water – stir well, then cook it in the pressure cooker for 9 to 10 minutes.
- Then mix the mixture of milk and cooked Rajgira grains well.
- Keep stirring occasionally on low flame so that the kheer does not stick.
- Add the dates and stir again and let the kheer cook on low flame for 2 minutes.
- Finally add chopped cashews and rose petals. Then mix it.
- Serve with dry fruits.
