Make Pav Bhaji Recipe at home in this simple way

Material:
2 medium potatoes (about 1½ cups diced)
1/2 cup green peas (fresh or frozen)
3/4 cup chopped cauliflower (about 1/4 head of cauliflower)
1/2 cup shredded carrots (about 1 medium)
1 large onion, chopped (about 3/4 cup)
1 tbsp ginger garlic paste
2 medium tomatoes, chopped (about 1¼ cups)
1/2 cup chopped bell pepper (about 1 small)
1½ teaspoons red chili powder (or less)
1/4 tsp turmeric powder
1 teaspoon cumin-coriander powder, optional
1 tsp readymade pav bhaji masala powder
1 teaspoon lemon juice
salt to taste
2 tbsp oil + 2 tbsp butter
butter for serving
2 tbsp finely chopped coriander
8 loaf buns, for serving
guidance:
1. Take all the vegetables listed in the ingredients. Wash them in running water and cut them into small pieces.
2. Put the chopped potatoes, cauliflower, carrots and green peas in a pressure cooker of 2-3 liters capacity. Add 1/2 cup water and salt as per taste.
3. Close the pressure cooker with a lid and cook on medium heat till 2 whistles. Switch off the flame. Open the lid after the pressure is released naturally; It will take about 5-7 minutes.
4. Using a potato masher or the back of a large spoon, gently mash the boiled vegetables till they turn slightly thick. You can mash the cooked vegetables as per your choice – smoothed into small pieces or without any pieces. The texture of your bhaji will depend on how you have mashed the vegetables.
5. Heat 2 tbsp oil and 2 tbsp butter together in a pan on medium heat. Add chopped onion and ginger-garlic paste. Fry till the onion becomes transparent.
6. Add chopped capsicum, chopped tomatoes and salt to it.
7. Fry till tomatoes and capsicum become soft.
8. Add 1½ teaspoon red chili powder, 1/4 teaspoon turmeric powder, 1 teaspoon cumin-coriander powder and 1 teaspoon readymade pav bhaji masala powder.
9. Cook while stirring for a minute.
10. Add 3/4 cup water, mix well and cook for 2-3 minutes.
11. Add boiled and mashed vegetables and 1 teaspoon lemon juice to it.
12. Mix well and cook for 4-5 minutes. Taste the salt at this stage and add more if necessary. Switch off the flame. Add chopped coriander leaves and mix well. Bhaji is ready to serve.
13. Cut the pav buns horizontally into two halves. Heat the pan on medium heat. Add a tablespoon of butter and place half of the pav buns over it. Fry till light brown spots appear on both the sides, it will take about 30 seconds for each side to turn light brown. Take it out in a plate. Lightly fry the remaining pav.
14. Transfer the prepared bhaji in a serving bowl and garnish with a cube of butter. Serve hot with butter-roasted pav, sliced onions and lemon wedges.
