Ingredients for making Malpua
Maida – Maida – 1 cup, Semolina – 1/2 cup, Sugar – 1/2 cup, Milk – 2 cup or as required.
Syrup: Sugar – 2 cups, Water – 1 cup, Green cardamom powder – 1/2 tsp, Orange food color – 1/2 tsp.
How to make Malpua

Mix 1 cup all purpose flour, 1/2 cup semolina and 1/2 cup sugar in a big mixing bowl, make a thick batter by adding lukewarm milk as needed. After this keep it aside for 30 minutes.

To make sugar syrup for Malpua, mix 2 cups of sugar and 1 cup of water in a pan and cook for 2 minutes or until the sugar melts well. Then add ½ tbsp green cardamom powder and food color, now cook it for another 2 minutes or until it becomes sticky.

Now heat oil in a pan and make round small pancakes by adding a spoonful of batter. Fry it on low to medium flame from both the sides till the edges turn golden brown.

Put the fried Malpua in the hot sugar syrup and soak it for at least 20-30 seconds.

Now finally garnish it with chopped pistachios and almonds and serve with cold and creamy rabdi.
