Material
8 ounces (226 grams) pasta (rotini, penne, or fusilli work well)
1 cup cherry tomatoes, cut in half
1 cup cucumber, cut into pieces
1/2 cup red onion, finely chopped
1/2 cup capsicum (red, yellow or green), chopped
1/2 cup black olives, chopped
1/2 cup feta cheese, chopped
1/4 cup fresh parsley, chopped
1/4 cup mayonnaise
1/4 cup sour cream or Greek yogurt
2 tbsp lemon juice
1 clove garlic, minced
Salt and pepper to taste
Method
- Boil the pasta according to package directions in a pot of salted water until al dente. Strain it and wash it with cold water to stop the cooking process. Let it cool.
- In a mixing bowl, whisk together mayonnaise, sour cream or Greek yogurt, lemon juice, minced garlic, salt, and pepper. Adjust spices as per taste. The dressing should be creamy with a zesty kick.
- In a large mixing bowl, combine cooled pasta, halved cherry tomatoes, chopped cucumber, chopped red onion, chopped bell peppers, chopped black olives and crumbled feta cheese.
- Pour creamy dressing over pasta and vegetables. Toss everything gently to ensure an even coating of creamy goodness.
- Sprinkle fresh parsley over pasta salad. The vibrant green adds a pop of color and freshness.
