Recipe- Deep Fried and Crispy Pinwheel Samosa – Dainik Savera Times

Material
for filling
4-5 nos. Potatoes (boiled, peeled, mashed)
1/2 cup green peas (fresh or frozen)
2 teaspoons ginger-green chilli paste (coarsely ground)
1 teaspoon red chili powder
1 1/2 tsp garam masala powder
2 teaspoons chaat masala or dry mango powder
1 teaspoon cumin powder
1 teaspoon coriander powder
salt to taste
green coriander finely chopped
juice of half a lemon
oil for frying pinwheels
for outer layer
1 cup all purpose flour (maida)
1 teaspoon salt
water for kneading dough
flour for batter
3 tbsp flour
1/4 cup water
Method
for flour
- Add flour, oil and salt in a mixing bowl. mix well.
- Start adding water little by little and start kneading a stiff dough.
- To prevent the kneaded dough from drying out, apply a little oil on it. Cover the dough and keep it aside for 20 minutes.
for filling
- In a bowl, add mashed potatoes, green peas, red chilli powder, garam masala powder, chaat masala or mango powder, cumin powder, coriander powder, salt and finely chopped coriander and lemon juice. Mix everything well. Check the seasoning and adjust accordingly.
flour for batter
- Add 3 tablespoons of flour in a bowl.
- Add 1/4 cup water (at room temperature) and mix well. Make a thin solution.
-Make sure no lumps form.
Pinwheel for Samosa
- Heat 2 tablespoons oil in a pan, add ginger-green chilli paste and fry for a minute until the raw smell goes away.
- Now add the potato mixture we had made along with all the spices to it. Mix well and cook this mixture on high flame for about 5 minutes so that the spices get mixed well in the potatoes.
- Remove this mixture from the flame and keep it aside to cool to room temperature.
- Knead the flour dough on a rolling board which we had prepared just to make it loose.
- Divide this dough into equal parts. Take a portion of the dough and roll it like a roti like we make chapati.
- Place the potato stuffing on this rolled flour roti and spread it evenly. Leave 1 inch space at the edges.
- Now roll the flour roti tightly.
