Material
1 1/2 cups tightly packed spinach leaves
2 tablespoons butter + more for toasting sandwiches
3/4 cup milk
1 teaspoon all purpose flour/maida
Black pepper powder Salt and chilli pieces as per taste
1/2 cup grated cheese
6 bread slices
Method
- Let’s start the Spinach and Paneer Sandwich by blanching the spinach. Bring a pot filled with water to a boil. Add well washed spinach leaves and 1/2 teaspoon sugar. Boil for about 5-7 minutes, filter and pat dry gently. Finely chop the spinach leaves and keep aside.
- Heat 2 tablespoons butter in a pan. Let it brown a little. Add 1 spoon of flour/flour and fry well.
- Add 3/4 cup milk and stir well on low flame. Make sure that there are no lumps in the flour. You can also do this by turning off the flame to avoid lumps forming.
- Let the sauce thicken, cook on low flame for -8 minutes.
- Add chopped spinach leaves to it and mix well. Add salt, black pepper powder and chili flakes.
- Switch off the flame, add grated cheese and mix well. The filling for Palak and Paneer Sandwich is ready. Divide into 3 equal parts.
- Take 6 sandwich bread slices. Apply butter on 3 slices. Place the prepared filling in the buttered slices and close with the remaining slices.
- Heat a griddle pan or tawa. Place the prepared sandwiches and toast/grill on both sides until the sandwiches become as crispy as desired. You can use butter for toasting.
- Grill the remaining 2 sandwiches in the same manner. Serve the spinach and paneer sandwich hot.
