Potato – 3-4
Cauliflower chopped – 1 cup
Tomato – 2
Cumin – 1/2 tsp
Turmeric – 1/4 tsp
Red chili powder – 1/2 tsp
Coriander powder – 1 tsp

Green coriander – 3 tbsp
Green chili – 2-3
Asafoetida – half a pinch

To make potato-cabbage curry, first wash and clean the potatoes and then peel them and cut them into half-inch pieces. After this, cut pieces of cabbage and tomato as well. Now prepare a paste of chopped tomatoes, green chillies and ginger with the help of a mixer. Now put oil in a pan and heat it. After the oil is hot, add cumin and fry it. When the cumin starts crackling, add chopped potatoes, cauliflower, turmeric powder and salt as per taste and fry the vegetable while stirring for 2 minutes. After this, cover the vegetable and let it cook for 5 minutes. During this, slow down the gas flame. Keep stirring the vegetable in between. Cover and cook the sabzi till the potatoes and cauliflower are nicely soft and crisp. This may take 15-20 minutes. Keep stirring the vegetable in between.
Now take another pan and heat it by adding 2 tbsp. When the oil becomes hot, add a little cumin, bay leaf, clove, cinnamon, black pepper and other spices and fry them. After frying for 1 minute, add tomato-chilli-ginger paste and mix well. Fry the spices until the oil starts separating from it. When the oil separates from the spices, add 1/2 cup of water to it. When the masala starts boiling, add potato-cabbage curry to it and mix. Now cover the vegetable and let it cook for another 5 minutes. After this add green coriander leaves and then turn off the gas. Your delicious potato-cabbage curry is ready. It can be served with roti, paratha or rice.
