Ingredients for Batter
Curd – 1/4 cup
Semolina – 1/4 cup
Salt – 1/2 tsp
Eno – 1 tsp
Water – 1/4 cup
Ingredients for Stuffing
Boiled Mashed Potatoes – 2
Peas – 2 tbsp
Coriander – 1 tbsp
Lemon juice – 1/2 tsp
Mustard seeds – 1/2 tsp
Cumin – 1/4 tsp
Fennel – 1/4 tsp
Whole coriander – 1 tbsp
Onion – 1 (finely chopped)
Green chili – 1 (finely chopped)
Red chili – as needed
Coriander powder – as required
Turmeric – as required
Asafoetida – as required

First of all, mix curd, semolina and salt in a bowl and keep it aside for 15 minutes.
Heat oil in a pan and fry mustard seeds, cumin seeds, fennel seeds, red chillies, coriander powder, turmeric powder, asafoetida and onions.
Now add potatoes, peas, coriander leaves and lemon juice to it.
When the mixture cools down, make small balls out of it.
Now add water and eno to the curd mixture and whisk it.
Put 1 tbsp of the paste in the idli stand and place the stuffing on top.
Pour 1 tbsp idli batter again over the stuffing.
Now let it cook. Take out the prepared idli in a serving plate and serve hot with coconut chutney and tomato sauce.
