After separating the leaves from the stem, you can keep it in the sun for 1-2 days to dry it. Or you can also heat it in the microwave for 30 seconds.
If both the options are not available with you right now, you can wrap the leaves in newspaper and dry them in the fan. Just keep in mind that the leaves should be dried so well that they break easily when crushed by hand.
Store curry leaves in these things
After drying the leaves properly, you can store it in an air tight container or bag and keep it in the fridge. By doing this, there is no danger of fungus in these leaves. Along with this, its freshness also remains. In this way, you can use curry leaves for 5-6 months.
If you don’t have a fridge, you can keep it in a cool place in the room. Just keep in mind that there is no water or dampness around.

Sweet neem leaves will remain green for 15-20 days
If you don’t want to use sweet neem leaves after drying them, you can wrap them in a paper towel and store them in the refrigerator to keep them green and fresh for 1-2 weeks.
For this, after washing and cleaning the leaves, keep them in the air till the water dries. Then after placing the paper towel in an air tight tiffin, place curry leaves and then after placing another layer of paper towel on it, close the tiffin and store it in the fridge. Do not forget to change the paper towel every 3-4 days.
