Material
1 cup long grain white rice
2 cups chicken or vegetable broth
Peel and juice of 2 lemons
2 tbsp olive oil
1 small onion, finely chopped
2 cloves of garlic, finely chopped
2 bay leaves
1/4 cup fresh dill, chopped
Salt and pepper to taste
Method
- Start by washing the rice thoroughly in cold water to remove excess starch. Drain well and set aside.
- In a medium saucepan, heat olive oil over medium heat. Add finely chopped onion and minced garlic. Sauté until the onions are translucent, which will take about 3-4 minutes.
- Add the washed rice to the saucepan and continue frying for 2-3 minutes. This helps in lightly roasting the rice grains, which enhances their taste.
- Add chicken or vegetable broth and add bay leaves. Boil the mixture lightly.
- Reduce heat to low, cover saucepan, and let rice simmer for about 15-18 minutes, or until liquid is absorbed and rice is tender.
- Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes.
- After resting, fluff the rice with a fork and separate the grains.
- Add lemon peel, lemon juice and fresh chopped dill to the rice. Slowly add these ingredients to the rice, allowing the flavors to mingle.
- Season with salt and pepper to taste and remove the bay leaves.
