Methi Paratha is a delicious Indian dish made with fenugreek leaves (methi) and whole wheat flour. Here is a simple recipe to make Methi Paratha
Ingredients required to make Methi Paratha:

1 cup fresh fenugreek leaves (methi), washed and finely chopped 2 cups whole wheat flour

1 onion, finely chopped (optional)

1 green chilli, finely chopped (adjust as per your spice preference)

1/2 teaspoon turmeric powder

1/2 tsp red chilli powder (as per taste)

1/2 tsp cumin powder

salt to taste

water, as required

ghee or oil for cooking
Prepare the dough: In a mixing bowl, mix the whole wheat flour with chopped fenugreek leaves, chopped onion (if using), green chilli, turmeric powder, red chilli powder, cumin powder and salt.
Mix the ingredients well, gradually add water and knead the mixture into a soft and smooth dough. Fenugreek leaves will release some water, so keep an eye on the quantity of water.

Cover the dough with a wet cloth and keep it aside for 15-20 minutes. This helps the dough become more flexible
Make a ball of dough and roll it with a rolling pin.
Make small lemon sized balls of the dough.
Take a ball, sprinkle flour on it and roll it into a circular shape with the help of a rolling pin. Aim for the same thickness as regular chapatti

Cooking Paratha: Heat a griddle or tawa on medium flame
Place the rolled paratha on a hot pan and cook for a minute or until you see small bubbles on the surface.
Flip and cook: Flip the paratha and apply some ghee or oil on the half cooked side. Cook until golden brown spots appear on the other side, pressing gently with a spatula to ensure even cooking
Repeat the same process for the remaining dough balls. Serve Methi Paratha hot with curd, pickle or any side dish of your choice.
