Material
To make about 6 popsicles, you will need the following ingredients:
1 can (13.5 oz) coconut milk (full fat for creaminess)
1/4 cup maple syrup or liquid sweetener of your choice
1 teaspoon pure mint extract or a handful fresh mint leaves (for natural mint flavor)
1 teaspoon vanilla extract
1/4 cup vegan chocolate chips or pieces (optional, for extra indulgence)
1/2 cup crushed vegan chocolate cookies or any vegan cookie of your choice
popsicle molds or small paper cups
popsicle sticks
Method:
In a blender or food processor, combine coconut milk, maple syrup, peppermint extract or fresh mint leaves, and vanilla extract.
Blend the mixture until it is smooth and well mixed. Taste and adjust the sweetness and mint flavor to your liking.
– If you want extra chocolaty flavor, add vegan chocolate chips or pieces to the mint base.
Pour the prepared mint base into popsicle molds or small paper cups.
If using paper cups, cover them with aluminum foil, and insert a popsicle stick into the center of each cup.
Generously sprinkle crushed vegan chocolate cookies over mint base in popsicle molds.
– Place the popsicle molds or paper cups in the freezer and let them set for at least 6 hours or better overnight.
