Baking soda – 1/4 tsp
Oil – 2 tbsp
salt – as per taste

Dry white peas – 1/2 cup
Cumin – 1/2 tsp
Coriander powder – 1 tsp
Ginger-garlic paste – 1 tsp
Cumin powder – 1 tsp
Dry mango – 1/2 tsp
Red chili powder – 1/2 tsp
Garam masala – 1/2 tsp
Oil – 1 tbsp
salt – as per taste

Mint leaves – 3/4 cup
Cumin – 1 tsp
Saunf – 1 tsp
Tamarind water – 1/4 cup
Big cardamom – 1
Dry red chili – 1
Asafoetida – 1 pinch
Black salt – 1 tsp
Black pepper – 1/2 tsp
Dry mango – 1/2 tsp
salt – as per taste

To make Matar Kulcha, first of all, we start the process of preparing Matar ki sabzi. For this, take peas and leave them soaked in water for 8-9 hours. After the fixed time, take out the peas from the water and put them in the cooker. Boil the peas by adding water and turmeric, salt as required in the cooker. After 4-5 whistles in the cooker, turn off the gas and drain the extra water from the peas and mash them lightly with the help of a big spoon.

Now put all the ingredients of jaljeera chutney in a mixer jar. After that add some water to it and grind it. Now put oil in a pan and heat it on low flame. After this, add ginger-garlic paste and fry it after adding cumin seeds. To make matar, put all the spice powders in it and then fry for some time. After this, add boiled peas, mix well with the spices and fry for 4-5 minutes.

Now start preparing to make Kulcha. Put all purpose flour in a mixing bowl and add curd and other ingredients to it and mix. After this add little water to the mixture and knead the dough. After this cover the dough and keep it aside for half an hour. After the fixed time, take the dough and roll out its dough and make kulcha. After this put a little oil on a nonstick pan and put the kulcha and bake it from both the sides. Your kulcha is ready. Similarly make kulchas from all the dough. Now serve kulcha with peas.
